Ingredients:
● Amla (Indian Gooseberry) pulp – 1 kg
● Candy sugar (Mishri) – 2 kg
● Rock salt – 10 gm
● Roasted cumin seed powder – 10 gm
● Black pepper powder – 5 gm
● Black salt – 5 gm
● Water – 1 litre
Servings: ~3 litres (to be diluted 3 times with water before serving; adjust as per taste)
Method of Preparation
- Boil fresh Amla, de-seed, and allow to cool. Grind into a smooth pulp.
- In a large vessel, dissolve candy sugar (Mishri) in an equal quantity of water by heating. The sugar syrup should be 2–2.5 times the quantity of Amla pulp.
- Slowly add the sugar syrup into the Amla pulp, mixing thoroughly.
- Take a small portion of this mixture, add roasted cumin powder, rock salt, black pepper, and black salt, then blend it back into the main mix.
- Store in a clean glass jar. Refrigeration ensures freshness. If storing outside, add 0.75 g potassium metabisulfite (KMS) per kg as a preservative.
